Blueberry & Seed Oat Muffins

2c Loon Song Farm Rolled Oats, ground

2 very ripe bananas, mashed

2 Honey Mill Farm Eggs

1Tbsp each Flax, Chia, Walnuts & Pepitas

1/2c Stinson Maple Products Maple Syrup

1 to 1-1/2c Fresh Wild Local Blueberries

1/2tsp each Baking Soda and Baking Powder


Preheat oven to 400F

Line a muffin tin with paper liners and set aside.

In a bowl, combine oat flour, baking soda and baking powder.

In a separate bowl, mash bananas and stir in eggs and maple syrup until smooth.

Add dry ingredients to wet ingredients and mix until just combined.

Carefully fold in seeds and blueberries.

Distribute mixture into prepared muffin tin.

Bake for 30-35 minutes or until tops are a nice toasty brown.
